Title:  Browned Butter Pecan Shortbread Cookies
Cookie Recipe:  1 ½ cups butter
¾ cup packed brown sugar
¾ cup powdered sugar
3 cups all purpose flour
1 ½ cups finely chopped toasted pecans

In large pan over medium heat, melt butter, stirring constantly 6 to 8 minutes or until butter begins to turn golden brown. Immediately remove from heat and pour butter into a shallow dish to cool. Chill, uncovered, until the butter begins to solidify.

Beat butter at medium speed with mixer. Gradually add the sugars, and beat until smooth. Gradually add the flour, beating until blended. Mix in the pecans.
Shape dough into 4 logs, 8 inch each. Wrap in plastic wrap and chill about 4 hours until firm.

Preheat oven to 350 or 325 for convection oven. Cut logs into ¼ inch slices, place on baking sheets lined with parchment paper or lightly greased sheets. Bake 8 to 10 minutes, until lightly browned. Remove cookies to wire racks to cool completely.

Note: browning the butter produces a nutty flavor. To toast nuts, place on baking sheet in preheated 325 oven for 3 minutes until lightly toasted, be careful not to burn. Toasting nuts brings out a richer flavor.
